1. In a large skillet over medium high heat, add the tablespoon of butter to melt. 2. Add the Cacique Premium Pork Chorizo, finely chopped yellow onion, garlic, and jalapeno to sauté. Use a spatula to break up the chorizo and cook until browned. Reduce heat to medium and remove to bowl. 3. Add the remaining two tablespoons of butter and flour. Stir until a roux forms. 4. Gradually stir in one cup of whole milk until slightly thickened. Repeat with the remaining cup of whole milk, stirring until thickened. Then, gradually stir in the Cacique Crema Mexicana until a thick creamy mixture. 5. Stir in the grated Cacique Oaxaca Cheese until melted into the queso. 6. Stir in the sautéed chorizo. Mix until well combined on LOW heat. 7. If not serving immediately, add up to ½ cup more of the Cacique Crema Mexicana to keep the queso creamy. 8. Serve in a carved-out pumpkin, if desired. Garnish with thinly sliced red onions, jalapenos, and freshly chopped cilantro. Enjoy immediately with tortilla chips!
