1. In a large bowl, mix together the sweetener of choice, pb2 powder and water. (Alternatively, you can mix 3/4 cup nut butter and sweetener over low heat.) 2. Whisk in the protein powder until evenly combined. 3. Fold in the brown rice crisps, then transfer to an 8x8” pan (that’s been lined with parchment paper). Freeze until solid. 4. Slice into bite sized pieces, dip each into the melted chocolate, transfer to a plate, then top with cacao nibs. Freeze until solid then enjoy! Keep leftovers in fridge for up to one week.
