1. Preheat oven to 425F. Line a mini cheesecake or cake pan (4-5 inches) with a small sheet of parchment paper. 2. Combine the Greek yogurt, cream cheese, protein powder, egg, 3 tbsp. maple syrup, and vanilla into a food processor or blender. Blend until smooth. Pour into the prepared pan. 3. Tap the pan 2-3 times to remove any air bubbles. 4. Bake for 25-35 minutes, until golden on top and slightly jiggly in the center. 5. In the meantime, combine the finely chopped apples, cinnamon, remaining 1 tbsp. maple syrup, and 1/3 cup water in a saucepan over medium high heat. Bring the water to a boil, then simmer while the cheesecake bakes, stirring occasionally. The apples should be tender and the water should be more like a thick apple juice. 6. Remove from oven to cool at room temperature for at least 20 minutes. 7. Top with whipped cream and the caramelized apples to enjoy!
