1. Preheat oven to 400F. Grease a muffin tin with the olive oil. 2. To Make the Cilantro Dipping Sauce: Combine all ingredients into a high-speed food processor. Pulse until smooth. Season with salt and black pepper to taste. 3. To Make the Buffalo Chicken Taco Bites: In a large bowl, combine the chopped chicken, buffalo sauce, chili powder, ground cumin, shredded cheddar, and fresh parsley. Mix well. 4. Using a 2 ½” – 3” cookie cutter make 2-3 smaller tortillas out of each warmed quinoa flour tortilla. Place each tortilla into an individual muffin tin. 5. Spoon a generous amount of the buffalo chicken into the center of each tortilla. 6. Bake for 10-15 minutes, until crispy and golden along the edges. 7. Let rest 8-10 minutes in the pan before enjoying warm with sour cream and the cilantro dipping sauce.
