
Chicken Tortilla Soup
This (One-Pot) Chipotle Chicken Tortilla Soup is ready in 30 minutes, hearty, high protein, and full of flavor!
What you need

poblano pepper

tbsp sour cream

oz corn

yellow onion

cup chicken broth
tbsp olive oil

tbsp chili powder

lb skinless boneless chicken breast

cup cilantro
lime
oz dried chili

garlic

cup avocado
Instructions
1. In a large deep skillet, add the olive oil to heat up over medium-high heat for 1 minute. Add the chicken to sear for 3-4 minutes on each side. 2. Add the chopped poblanos, onion, and garlic to sauté along the outside of the chicken breasts for 2-3 minutes, until fragrant. 3. Add the bone broth and stir in the seasonings. Cover with a lid and simmer on LOW for 15 minutes. 4. Remove the chicken to shred on a cutting board with two forks. Add the shredded chicken back into the soup. 5. Stir in the lime juice, chopped cilantro, and corn. Simmer for 5 minutes and enjoy warm with your favorite toppings!View original recipe
