
Creamy Pesto Parmesan Baked Salmon
A gorgeous Spring entree that is easy to make and will seriously impress your guest!
What you need
lemon

tsp sweet butter

oz baby arugula

garlic

salt

cup parmesan cheese

cup basil

black peppercorn

cup extra-virgin olive oil
Instructions
Preheat oven to 400F. Line a rimmed baking pan with parchment paper. In a food processor, combine the arugula, basil, garlic cloves, 1/2 cup parmesan, and zest of 1 Lemon. Pulse until almost smooth. While on low speed, gradually drizzle in the olive oil. Add the butter and pulse until smooth. Adjust to taste with salt and black pepper. Add the salmon fillets to the prepared pan. Generously spread the pesto over each salmon fillet, then top with the remaining parmesan and lemon zest. Bake 20-25 minutes, until fully cooked.
