Instructions
To Make the Chicken Bites: Preheat oven or air fryer to 400F. If using oven, line a large baking sheet pan with parchment paper. Slice the chicken into bite-sized pieces. In a large bowl, combine the chicken bites, beaten eggs and buttermilk. Let sit at least 10 minutes. In a large tubberware or bowl, combine the panko breadcrumbs, salt, and paprika. Using a slotted spoon or fork, add the chicken bites into the panko mix and toss until the chicken is well coated in the crumbs. Place the chicken on the air fryer racks or prepared sheet pan. Lightly drizzle with the olive oil. For the Oven: Bake for 8-10 minutes, flip the chicken bites, then bake an additional 8-10 minutes. Until crispy and fully cooked inside. For the Air Fryer: Bake for 4-5 minutes, slip the chicken bites, then bake an additional 4-5 minutes. If needed, bake longer until crispy and fully cooked inside. To Make the Honey Sriracha Glaze: Combine all ingredients in a small saucepan over medium high heat. Stir to combine and bring to a boil, them simmer for 4-5 minutes to thicken. To Make the Basil Dipping Sauce: Combine all ingredients in a small blender or food processor to pulse until smooth. Thin out texture with water and season with salt and black pepper to taste. To Serve: Toss the crispy chicken bites in the honey sriracha glaze in a large bowl until evenly coated. Serve warm topped with sesame seeds, green onions, and the basil dipping sauce to enjoy!View original recipe
