
French Onion Grilled Cheese Sandwich
I simply can not put into words how delicious this grilled cheese is!
What you need

sourdough bread

tsp ground black pepper

tsp salt

garlic

tbsp thyme

tbsp salted butter

oz shiitake mushrooms

yellow onion
Instructions
In a large skillet over medium-high heat, add 2 tablespoons butter. Once melted, add the thinly sliced onions. Season with the salt and black pepper. Cover and cook for 5-6 minutes, until softened. Stir the onions as you add ¼ cup water to de-glaze the pan. Reduce heat to medium and continue the cooking process until the onions are deeply caramelized, about 10-15 more minutes. Increase heat to medium high heat again. Add the thinly sliced mushrooms, (optional) minced garlic, and chopped thyme. Saute until the mushrooms are tender. On a slice of sourdough bread, add 1-2 slices of the Raw Cheddar Cheese, followed by 1/3rd of the caramelized onions and mushrooms, another 1-2 slices of cheese, and sandwich with a second slice of bread. Repeat with remaining sandwiches. Butter the outside of the sandwiches, then place on a skillet over medium heat to cook 2-3 minutes, until golden on the outside and cheese is melted. Cover with a pan lid to help the cheese melt. Enjoy!View original recipe
