French Onion Grilled Cheese Sandwich

What you need

sourdough bread

tsp ground black pepper

tsp salt

garlic

tbsp thyme

tbsp salted butter

oz shiitake mushrooms

yellow onion
Instructions
In a large skillet over medium-high heat, add 2 tablespoons butter. Once melted, add the thinly sliced onions. Season with the salt and black pepper. Cover and cook for 5-6 minutes, until softened. Stir the onions as you add ¼ cup water to de-glaze the pan. Reduce heat to medium and continue the cooking process until the onions are deeply caramelized, about 10-15 more minutes. Increase heat to medium high heat again. Add the thinly sliced mushrooms, (optional) minced garlic, and chopped thyme. Saute until the mushrooms are tender. On a slice of sourdough bread, add 1-2 slices of the Raw Cheddar Cheese, followed by 1/3rd of the caramelized onions and mushrooms, another 1-2 slices of cheese, and sandwich with a second slice of bread. Repeat with remaining sandwiches. Butter the outside of the sandwiches, then place on a skillet over medium heat to cook 2-3 minutes, until golden on the outside and cheese is melted.
