
Heart-Shaped Pink Ravioli

What you need

red beet

iodized salt

ricotta cheese

parmesan cheese

basil

iodized salt

ground black pepper

cup all purpose flour
Instructions
Mix the flour and salt together on a clean surface or in a large bowl. Create a well in the center to add the beaten eggs and beet puree. Knead until a smooth and elastic pasta dough, about 4-6 minutes. Adjust the pasta color with the beet puree. Wrap the pasta dough in plastic wrap and set aside at room temperature for 20 minutes. In a large bowl, combine the filling ingredients. Divide the pasta dough into 2 parts. Roll each portion on a lightly floured surface to 1/16” thickness. Working quickly, place rounded teaspoons of the filling 1” apart over half of each pasta sheet. Fold over the pasta sheet and press down slightly to seal. Use a sharp knife or a heart-shaped cookie cutter to make your heart-shaped ravioli. Bring a large pot of salted water to a boil. Add the pasta and cook 1-2 minutes, until it floats to the top.
