Chocolate Stuffed Cookies (Two Ways)

These chocolate stuffed cookies can be made two ways: as a classic chocolate chip cookie or a fudgy brownie cookie, both with a surprise chocolate center. Choose between Sea Salt Caramel Brownie, Regular Chocolate Chip, or Pretzel Brownie Cookie.

What you need

cup semi-sweet chocolate

tsp baking soda

cup chocolate

cup unsalted butter

tsp vanilla extract

tsp fine sea salt

cup all purpose flour

tsp baking powder

cup brown sugar

cup granulated cane sugar
Instructions
For the Homemade CCC Dough: 1. To Make the Dough: In the bowl of a stand mixer fitted with the paddle attachment, combine the softened butter and sugars. Beat for 2 minutes. 2. Add the eggs and vanilla. Beat another 2 minutes. 3. In a large bowl, mix the flour, baking soda, baking powder, and salt together. Pour into the stand mixer bowl and mix just until combined. 4. To Make the Chocolate Chip Version: Add the finely chopped chocolate and mix again just until combined (no flour clumps). 5. To Make the Brownie Version: Add the melted chocolate and mix just combined (no flour clumps). 6. Cover and chill in the fridge 15-30 minutes. 7. To Bake: Preheat oven to 375F. Line 1-2 large baking pans with parchment paper. 8. Using 2-3 tablespoons of cookie dough per cookie, flatten out the cookie dough in your hands, add a Tiny Tony’s Chocolate in the center, then pinch the edges together and roll in between the palm of your hands to seal it in. 9. Place the chocolate stuffed cookie dough balls on the prepared pan. 10. Bake for Bake for 15-18 minutes, until just beginning to be golden brown on top. 11.
