What you need

cup plain flour

cup panko breadcrumbs

tbsp apple cider vinegar

tsp garlic powder
cup plain greek yogurt

cup fresh basil leaves

zucchini

tsp italian herb mix

cup grated parmesan cheese

tsp salt & pepper

egg

Instructions
1. Cut the zucchini lengthwise in half. Cut those both in half as well. Then cut into fry-like shapes about 2” long and 3/4” thick. Set aside. 2. Using three bowls to set up your filling station. In one bowl, whisk the eggs. In the second bowl, add the flour. 3. In the third bowl, mix the breadcrumbs, herbs, garlic powder, parmesan cheese, salt and black pepper. 4. Working in small batches, first dip the zucchini fries into the flour, then the eggs, then the breadcrumb mixture. 5. Add to your air fryer and spray lightly with olive oil. 6. Cook at 400F for 8-10 minutes, flipping halfway if needed, until crispy and golden brown. 7. To make the sauce, simply whisk all ingredients together and serve with the crispy zucchini fries.
