What you need

focaccia

oz parmesan

bunch baby arugula

bunch basil pesto

cup all purpose flour
egg

zucchini

cup panko breadcrumbs
Instructions
1. Set up a battering station with three bowls. Add the flour to one bowl, the beaten egg to the second bowl, and the breadcrumbs to the third bowl. 2. Slice the zucchini in ½” thick slices. Dredge through the flour, then the beaten egg, then the breadcrumbs to fully coat. 3. Fry the zucchini in hot oil until crispy and golden brown on both sides. Remove with tongs to a paper towel lined plate. 4. Layer the bottom half of the focaccia with a generous slather of basil pesto, the burrata, crispy zucchini, baby arugula, and freshly grated Parmesan.
