What you need

egg

tbsp maple syrup

oz light cream cheese

oz nonfat greek yogurt

tsp vanilla bean

tsp ground cinnamon

honey crisp apples

cup rice protein powder
Instructions
1. Preheat oven to 425F. Line a mini cheesecake or cake pan (4-5 inches) with a small sheet of parchment paper. 2. Combine the Greek yogurt, cream cheese, protein powder, egg, 3 tbsp. maple syrup, and vanilla into a food processor or blender. Blend until smooth. Pour into the prepared pan. 3. Tap the pan 2-3 times to remove any air bubbles. 4. Bake for 25-35 minutes, until golden on top and slightly jiggly in the center. 5. In the meantime, combine the finely chopped apples, cinnamon, remaining 1 tbsp. maple syrup, and 1/3 cup water in a saucepan over medium high heat. Bring the water to a boil, then simmer while the cheesecake bakes, stirring occasionally. The apples should be tender and the water should be more like a thick apple juice. 6. Remove from oven to cool at room temperature for at least 20 minutes. 7. Top with whipped cream and the caramelized apples to enjoy!View original recipe
