Eggnog Protein Flapjacks with Honey-Cinnamon Compound Butter

What you need

tsp ground cinnamon

cup unsalted butter

pinch salt

tbsp powdered sugar

cup eggnog

cup honey
Instructions
1. To Make the Compound Butter: Combine all ingredients in a stand mixer fitted with the paddle attachment. Beat until smooth, about 2-4 minutes. 2. To Make the Flapjacks: Combine the eggnog and flapjacks mix in a large bowl. Mix until a thick but still runny batter. If needed, add 2 tbsp. water at a time. 3. Add butter to a griddle over medium heat. Once melted, add ¼ cup batter per pancake. Cook until you begin to see bubbles and the pancaked edges browning, about 2-3 minutes. Flip with a spatula and cook an additional 2-3 minutes. 4. Enjoy warm with the honey-cinnamon compound butter and maple syrup.View original recipe
